The 2025 Sauvignon Blanc has notable aromas of lime, grapefruit, passion fruit, and a hint of lemongrass with a refreshing mineral finish. Pairs best with white meat and cheese.Winemaker Notes
We picked the grapes early to retain acidity & fresh fruit flavors. We then crushed these Sauvignon Blanc grapes & left them on the skins only briefly (24 hours) to extract aromatics and some tannin. The grapes are pressed to extract the juice. After settling out solids, we fermented the clean & clear juice in stainless steel tanks at cold temperature (50 degrees Fahrenheit) to maintain clean & crisp aromatics, the fermentation process took about 21days. The Wine is then aged with lees contact for 5 months in Stainless steel tank before bottling.Wine Profile
